Join us for a Georgian cuisine workshop where we’ll explore one of its best-known and most beloved dishes: khachapuri. We’ll make three different kinds, discovering the variety of this simple yet distinctive Georgian dish. We’ll prepare Imeretian khachapuri, Adjarian khachapuri, and a heartier meat-filled version, paying attention to the dough, the filling, and the right preparation techniques for each.
Step by step, we’ll learn the finer points of making khachapuri dough: how to get it elastic and easy to shape, how to roll and fill it properly so the cheese and other ingredients are evenly distributed, and how to help the khachapuri hold its shape as it bakes. We’ll also focus on baking temperature and time, since the right heat is what gives it its characteristic golden crust, juicy filling, and tempting aroma.
We’ll explore Imeretian khachapuri in its classic round shape with a generous cheese filling, while Adjarian khachapuri will be made in the shape of a boat, highlighting its distinctive filling and way of serving. The third version will be made with meat: a hearty, flavourful khachapuri that offers another take on this Georgian classic.
This workshop is also about the enjoyment of eating. You can enjoy all the khachapuri you make on site, freshly baked and still warm, to best appreciate their texture, aroma, and flavour, or take them home. This is especially important for Adjarian khachapuri, which is best enjoyed straight from the oven, while the cheese is warm and the dough is soft and crisp.
During the workshop, we’ll learn to make three kinds of khachapuri and understand the key principles you can use in your own kitchen. It will be a hands-on, hearty, and delicious introduction to Georgian cuisine, where simple ingredients become a dish made for sharing, conversation, and enjoying together.
