Concert Dinner: “You Went into the Forest, I Went into the Forest…”

You went into the forest, I went into the forest… 🌲 Lenna and Lauri went into the forest too. And this time, the stories and flavours are heading into the forest as well. Ilmaveere’s next concert dinner takes us to the source of one of the most distinctive ingredients in Estonian cuisine: game meat.

The evening centres on the forest, hunting and the people who bring ingredients from the forest to our kitchen. It is a tribute of sorts to hunters and hunting culture: their knowledge of the forest and game, their skill in using what nature provides, and the traditions passed down from generation to generation.

Head chef Merino Lastik will prepare game in Ilmaveere’s own style, creating a special multi-course menu for the evening. Lenna and Lauri will take on songs and stories that resonate with the forest, hunters and everything connected with them.

GOAT AND PINE
goat tartare / pine-needle mayonnaise / pickled lingonberries / crispy lichen

GOOSE LIVER
buttered toast / pan-fried goose liver / caramelised onion / rowanberry gel

HARE
hare stuffed with truffle cream / mushroom quinoa / porcini sauce

MOOSE
grilled moose fillet / cranberry and game sauce / glazed black cheese / smoky celeriac cream

JUNIPER
juniper mousse / spruce ice cream / rye crisp / wild blueberry compote

The kitchen reserves the right to make small changes to the menu depending on the season, the ingredients and what November and the hunters can provide at the time.

Doors open at 17:00. The programme starts at 18:00.

🌲 Group ticket: €82 per guest for groups of 4 or more. We’ll arrange a table for groups where possible.
