How much can we really “design” our own bodies and well-being? This panel looks at food from a different perspective—not only through pleasure, but also through health, physical performance and the future. We’ll talk about the role food plays in shaping the body and in training, why there is growing interest in mushrooms and their potential effects on our well-being, and where the food world is headed when some of it is already being made in laboratories. Will our future menu look very different from today’s? How much are our choices shaped by science and technology, and how much should we instead look back to nature?
The discussion is moderated by Kaisa Kopliste, a nutrition counsellor and master’s student in anthropology.
Participants:
Siim Savisaar, physiotherapist and personal trainer—on designing the body at the gym
A representative of Shroomwell—on the world of mushrooms and their role in well-being
Sirli Rosenvald, Funki Foods / TFTAK—on food innovation, new proteins and what the food of the future might look like.
