Fotografiska x Nolla Blackout Dinner

This is an evening when the lights are dimmed and dishes arrive at the table having been prepared without the kitchen using a single watt of artificial energy. Blackout Dinner is not merely a dinner, but a curated, complete experience – a considered menu in which every ingredient and preparation method matters. This Blackout Dinner is held in collaboration with Fotografiska Tallinn restaurant’s head chef Gerli Travkin and the co-founders of Helsinki restaurant Nolla, Carlos Henriques and Albert Franch Sunyer.

When creating the menu, one clear principle has also been followed: the journey of the ingredients must be as electricity-free as possible, from growing and preserving through to processing. This is a deliberate challenge to the familiar and widespread logic of kitchens, where electricity accompanies almost every step. The electrical footprint of a restaurant’s operations can be very large and, unfortunately, continues to grow over time. Almost every step in preserving and processing ingredients requires more or less electricity. But we ask: what if we did things differently? This evening is the practical and flavourful answer to that question.

Blackout Dinner
The Blackout Dinner format was born in 2014 at the Amass restaurant in Copenhagen, when an unexpected power outage turned an ordinary dinner into a complete experience. What began by chance developed into a deliberately created format of dining in the dark, which continues to this day and has reached the Fotografiska restaurant on several occasions.
